Chocolate Mousse

Makes 3 servings, with 25mg each

2 large egg yolks
1 Tbsp Azuca Simple Syrup
1 Tbsp sugar
1 cup heavy cream
4 oz bitter sweet chocolate, melted
½ tsp vanilla extract 

Whisk together egg yolks, Azuca Simple Syrup, ½ cup heavy cream in a small sauce pan over medium-low heat.  Cook while stirring until mixture thickens enough to coat the back of your spoon, do not boil.  

Remove from heat and whisk in the vanilla extract and melted chocolate. Pour into a bowl and chill in refrigerator.  

Beat remaining heavy cream with 1 tbsp sugar until stiff peaks form.  Fold 1/3 of whipped cream into cooled chocolate mixture very gently so as not to deflate the cream.  

Divide into 3 equal portions and chill for at least 30 minutes. Enjoy with chocolate shavings, extra whipped cream or fruit of your choice.
